Peachy Chicken


This is another new recipe I tried this week. Tim gave it about the same rating that he gave the last one, only slightly less. My rice was kind of chewy or something, but that was my own fault. I think I let it cook too long.
Peachy Chicken
4 boneless skinless chicken breast halves
1 T. vegetable oil
1 T. butter
1 can (15 1/4 oz) sliced peaches, undrained
1/2 cup packed brown sugar
1/2 cup orange juice
1 envelope onion soup mix
Hot cooked rice, optional
In a large skillet over medium heat, brown chicken in oil and butter; remove and keep warm. Add peaches with juice, brown sugar, orange juice and soup mix to skillet; stir until combined. Bring to a boil cook and stir for 2 min.
Reduce heat; return chicken to pan. Simmer, uncovered, for 15-20 min or until chicken juices run clear. Serve over rice if desired. Yield: 4 servings

Can you eat this on your diet or did you only make this for Tim? I do not think I would like your choices of foods. I don't like pineapples on my burgers and peaches on my chicken?.nah.

I did eat it on my diet. My main thing is moderation, only having bread once a day (if at all) and trying to stay away from sugar (Little Debbies, candy bars, chocolate). I do realize that there was quite a bit of sugar in this recipe. The picture I took was of Tim's plate, I had about 1/2 as much.

No I wasn't checking on your diet. I thought maybe this was a special recipe FOR your diet. I know you are not doing ATKINS but do you have his complete book with recipes? The recipes might give you something else to cook. I will look in my new one and see what he has in there. The new book is thick and really nice.

No, I don't have any special recipes for my diet, since I made it up.
