New Recipe Monday

This past week I tried several new recipes. One of them was "Easy Apple Pie Rolls". I found the recipe for them here. These were pretty good. I made them for breakfast, but they could also be considered more of a dessert. Around here, those two words are synonymous. :) It was a little strange to put the dough into a pan full of liquid, but as you can see from the picture above, the rolls do soak up quit a bit of the liquid and what's left is like apple pie filling.
Now that I'm not working (away from home that is!), I've found my love of cooking again. I had lost it there for awhile. I have so many recipes saved and bookmarked and cut out that I could probably try something new every day and never run out! I hope to share more of the recipes I try on here, at least the good ones!

Mulberry Pie

Last Friday we had a play date at Kellie's house. While I was there, Kellie graciously allowed me to pick mulberries off of her bush. Isaiah loved picking them and eating them and it was so much fun to watch him! I had no idea what I was going to make with the berries and honestly I wasn't even sure I was a fan of them. As you've probably figured out though, I am a big fan of free food! I did think that perhaps I would try a mulberry pie. After all, if you add vanilla ice cream, it can't be that bad!I have to show off my new colander. I have had serious colander envy ever since I saw Katherine's and how cute it looked full of cherries! I think it reminds me of our grandma and country life in general. I found it at Lehman's.

Here is my pie ready to go into the oven. The pie plate was also found at Lehman's. In the background is my other grandma's rolling pin. I have such great memories of both my grandma's and miss them a lot!

Fresh out of the oven. The pie recipe I used can be found here. I did follow the advice of some of the reviewers and changed it by using 2/3 cup sugar and 1/3 cup flour. I also followed the advice of leaving the stems on the mulberries. You really don't even know they are there and it saves a lot of time and hassle! I can not fine my pie crust recipe (I use a different one every time). I will keep searching though as it had several compliments! The crust used all butter (no shortening) and a little bit of sugar. My parents both liked the pie and neither one was a mulberry lover beforehand.

The best part of making pie? Leftover crust, cut into strips, and sprinkled with cinnamon sugar and baked. Mmmm.

Banana Butterscotch Bread

What do you do with your bananas when they look like this? Do you throw them out? Don't do it! I have to admit, I have never been a fan of banana bread. I'm not even that crazy about bananas. However, the more I try them in different things, the more they have grown on me. Besides that, I don't have money to throw away on food that gets wasted!

I made two batches. One batch was in two loaves, but they were both rather short. Kind of like when you buy muffin tops, except they were like loaf tops. The second batch I made into muffins (used the whole mix to make 12 muffins). I really liked how the muffins turned out and they were easy to grab on the go.

Banana Butterscotch Bread

1/2 C. butter

3/4 C. sugar

1 egg, large

3 bananas, ripe

2 cups flour

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

3/4 tsp. cinnamon

1/8 tsp. nutmeg

1/2 to 3/4 cup butterscotch morsels

1/2 cup chopped walnuts (optional)

Grease or spray two loaf pans. Cream butter, egg, and sugar. Add mashed ripe bananas. Sift flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Add to creamed mixture, blend. Add butterscotch morsels and nuts by folding in gently. Pour into pans, bake at 350 for 25-28 minutes.

The recipe is from this cookbook. It's from a place called The National Pike Inn in New Market, MD.
