Banana Butterscotch Bread

What do you do with your bananas when they look like this? Do you throw them out? Don't do it! I have to admit, I have never been a fan of banana bread. I'm not even that crazy about bananas. However, the more I try them in different things, the more they have grown on me. Besides that, I don't have money to throw away on food that gets wasted!

I made two batches. One batch was in two loaves, but they were both rather short. Kind of like when you buy muffin tops, except they were like loaf tops. The second batch I made into muffins (used the whole mix to make 12 muffins). I really liked how the muffins turned out and they were easy to grab on the go.

Banana Butterscotch Bread

1/2 C. butter

3/4 C. sugar

1 egg, large

3 bananas, ripe

2 cups flour

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

3/4 tsp. cinnamon

1/8 tsp. nutmeg

1/2 to 3/4 cup butterscotch morsels

1/2 cup chopped walnuts (optional)

Grease or spray two loaf pans. Cream butter, egg, and sugar. Add mashed ripe bananas. Sift flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Add to creamed mixture, blend. Add butterscotch morsels and nuts by folding in gently. Pour into pans, bake at 350 for 25-28 minutes.

I don't usually like banana bread either, but those actually look decent. Did you put the walnuts in them?

If you watch closely, you'll probably see me inhaling a ridiculous amount of sweets on Sun. It feels like Lent has lasted an ETERNITY.

I hate bananas everything about them!! But the muffins look good, if I pretend there are no disgusting bananas in them!!

I did not put walnuts in them. That is one of the reasons I am not crazy about banana bread. I barely like bananas and don't like walnuts. I'm not sure if they tasted all that banana-y. I only used 2 bananas in the second batch and they still turned out fine. I put just a little bit of milk to add a little moisture.

The butterscotch part sounds wonderful! Bananas are only for monkeys!!!
