Soup Recipes

Chicken Tortilla Soup

Mix together in large pan:

2 cans cream of mushroom soup
2 cans cream of celery soup
2 cans cream of chicken soup
2 cans Fiesta cheddar soup
2 cans chicken broth (soup can size)

Do NOT add water; stir until smooth. Turn heat on LOW.

Add:
1 small onion- chopped
1 T. cilantro
4 cloves of garlic chopped
1 small can of green chilies
4 tsp. chili seasoning

Continue to cook over LOW heat and stir frequently.
Add:
1 cup salsa
2 small cans of diced tomatoes
2 cups of diced cooked chicken (can use canned chicken)

Continue to cook over LOW heat stirring frequently, until hot. Serve in bowls topped with finely shredded cheese (cheddar or taco) and crumbled tortilla chips. Serve with sour cream on the side.

Cheesy Chicken Chowder

3 c. chicken broth
2 cups diced potatoes
1 c. diced celery
1 1/2 tsp. salt
1 c. diced carrots
1/2 c. diced onions
1/4 tsp. pepper
1/4 c. butter
2 c. milk
1/3 c. flour
2 c. shredded cheddar cheese
2 c. diced chicken
1 can creamed corn

Bring chicken broth to a boil. Add potatoes, celery, salt, carrots, onion and pepper to broth and cook 15 min. or until tender. Melt butter over low- med heat in a separate pan. Stir flour into butter until mixed. SLOWLY add milk and stir continuously till smooth. Add cheese and stir until melted. Add cheese mixture, chicken and corn to chicken broth mixture and stir. Serve hot.
