My favorite low carb recipes

This is mainly for Sonya and Jamie who are starting their Atkins diet today, but these are really good recipes even if you aren't dieting.

Knock Your Socks Off Pie
Crust:
1 cup crushed pecans (ground as fine as you can) I used to buy "pecan meal" at the grocery store .
2 T. melted butter
1-2 T. Splenda
Preheat oven to 350. Mix together and press into a 9 inch pie pan. Bake for 10-15 min. Cool completely before adding filling.
Filling:
1 pkg. sugar free white chocolate pudding mix
1 cup heavy whipping cream
1/2 cup water
1- 8oz pkg. cream cheese softened.
Mix the first three ingredients together until blended, add the cream cheese and mix until smooth. Spread into cooled crust and refrigerate until set. Cut into 6 servings. Each serving equals 5.5 carbs. I would cut it into 8 servings so the carbs would be less.

Twice Baked Faux -Tatoes
2 cups raw cauliflower pieces
2 T. mayo or sour cream
1/4 cup grated sharp cheddar cheese
1-2 T. grated Parmesan or asiago cheese
1 chopped green onion, white and green separated
salt and pepper to taste
1-2 T. crumbled bacon (or Hormel real bacon pieces)

1. Cook cauliflower until tender.
2. Chop small, mash by hand, or process in blender. Depending on the consistency you like, mashing by hand and chopping produce a chunkier texture.
3. Stir in the mayo, cheeses, white part of onion, salt and pepper.
4. Heat through in the microwave.
5. Top with green onion and bacon crumbles. Serves 1. Total carbs 7 g.

I really really liked these and I am not a cauliflower eater. In fact I don't like a lot of veggies. This is even better after it sits, the flavors start to mix together.

Chicken Salad
Chopped up Chicken
Some mayo
sliced green olives
some chopped celery (I don't always like the crunch of celery, so I use celery salt).
salt and pepper to taste

Sugar free jello
Mix sugar free jello with 1 cup of boiling water. Stir until disolved. Then add 1 cup whipping cream and stir. (This is one of the best low carb recipes ever. You can do all kinds of flavors. Orange kind of tastes like a creamsicle or strawberries and cream, etc. Last night my mom did lime and cream for St. Patricks Day.)

Bacon and Ranch Chicken
Put several chicken breasts into a 9x13 pan. Sprinkle with Hidden Valley Ranch Dressing Mix. Make sure it's the one that says 0 carbs on the back. I think it's the original. **Edited to add: It's the fat free version! Then add slices of bacon on top and sprinkle with cheddar cheese. Bake at 350 until chicken is cooked through and bacon is cooked. Probably about 45 min to an hour. If you like your bacon crispier, cook it before putting it on top of the chicken or use bacon bits (the real ones). This definately doesn't taste diet and has a lot of flavor from the dressing mix.

I'm sure that I'll think of more, but I thought maybe this would give you guys some inspiration.

YUMMY YUMMY Those are awesome...the chicken one sounds amazing. I liked that one you gave me last time with the little drops of "chocolate" on wax paper...do you remember that one? Steve and I fought over those boogers. Thanks for thinking of us. i have lost 10 pounds so far this morning.

Wow Lura, that was so nice of you to type out all of those recipes for us. They look really yummy and I know I'll be trying most of them!! The Bacon and Ranch chicken and the cauliflower one both look very tasty. I'll be trying both this week!! Thanks so much!!

Ok, I tried to comment on this earlier and it didn't go thru. I said that i tried the chicken before and it is very yummy! I think when i do it again i'll cook the bacon a little bit first.

OH! And the chicken salad is known in our house as "Aunt Lura's famous Chicken Salad". I love it! I use celery salt instead too.

I emailed this ranch chicken and the Foux tatoes to Shawn today at work and he begged me to stop and buy the ingredients......he wanted to have it tonight for dinner so bad! I will buy the ingredients this week and make, it sounds delicious!
