A new recipe and an old one.




I want to make it a goal to cook at least one new recipe a week this year if not more. Last night I made spaghetti for supper and made these muffins to go with it. They are from Taste of Home magazine.

Italian Herb Muffins

2 c. all purpose flour
2 T. grated Parmesan cheese
1 T. sugar
1 T. Italian seasoning
3 tsp. baking powder
1 tsp. salt
1 egg
3/4 cup milk
1/2 cup vegetable oil
1/4 cup butter, softened
1/2 tsp. garlic powder

In a bowl, combine the flour, Parmesan cheese, sugar, Italian seasoning, baking powder and salt. In another bowl, whisk the egg, milk and oil; stir into the dry ingredients just until moistened. Fill greased or paper lined muffin cups three fourths full. Bake at 400 for 15-20 min or until a toothpick comes out clean. Cool for 5 min. before removing from pan to a wire rack. In a small bowl, combine the butter and the garlic powder. Serve with warm muffins. Yield: 10 muffins

I made mine in mini muffin tins. Tim said they were a little too herby, so next time I think I would cut the seasoning in half. I think part of the problem was that my Italian seasoning has some whole herbs in it like rosemary or fennel and so it seemed "seedy". The boys were calling them bugs. The taste was good though! I probably wouldn't make the garlic butter again, regular butter would be fine. Actually, you could probably just put the garlic powder in the muffins and use regular butter!

This morning I made monkey bread which is a favorite at our house. It was the first thing that has really tempted me since I've been dieting this week.

Monkey Bread

3 cans buttermilk (or any kind) biscuits (10 in a can)
1 c. granulated sugar
2 tsp. cinnamon
1 c. brown sugar
1 stick oleo (butter or margarine)

Cut each biscuit into fourths with scissors. Shake biscuits in a bag with granulated sugar and cinnamon. Layer biscuits into a greased tube pan (not one with removable bottom). Sprinkle with nuts if you wish between layers. Melt brown sugar and butter and boil 1 minute; pour over biscuits. Bake at 350 for 35 minutes. Let stand 10 minutes before removing from pan. To serve just pinch off a piece and eat with fingers. Monkey see, monkey do!


I have a mini tube pan that I use, so I only use 2 tubes of biscuits. I use the Aldi very cheap kind. I have never used nuts in mine. When mine have sat after cooking, I invert them onto a plate. It seems that the ones on the top need to get a little more "done" so that the ones in the middle get cooked through. I might try putting foil on top for the last 10-15 min. next time to cut down on the burned look.
